Good morning everyone. I wanted to share my Double Hot pepper Jelly recipe.

1. 1-2 Scorpion peppers with seeds.
2. 1-2 Ghost peppers with seeds.
3. 6 1/2 cups sugar.
4. 1 1/2 distilled Vinegar ( use the half cup in food processor with peppers. )
5. 2 pouches liquid pectin.

In a large pot ( non coated pan ) pour in vinegar heat. In food processor pour the 1/2 cup vinegar put in peppers and blend add to pan then add the sugar. cook mixture until sugar is dissolved bring to boil then remove from heat add pectin stir then place back on heat and bring to a roiling boil for 1 minute. 

Place in clean hot jars make sure you leave 1 inch from top, make sure rims are clean and place lids and bands. Having your hot water bath ready place jars in boiling water for 15 minutes. Then remove and place on towel. when you hear the ping the jars are sealed.

Good Morning Hope all is well today. Today i want to share  some more pictures. I was finally able to pick the Carolina Reapers they are rough and dark orange.

They will make a nice addition to my Hot Pepper powder. We dry the peppers and then grind them, so that we can mix 4 of the hottest peppers and i place them in small shakers. But this in not for the faint of heart and those who can no handle really hot stuff should not use

I have a Friend who uses this powder in chili, and a dish he makes often its called Calavasa. Yes I've tried it with out the powder because its way to hot for me. Yes i'm a wimp for my stomach cant take that heat. But I love to grow the Plants. So here are some pictures for me to share with you.


 The pictures to my left are the jars i use for my powder and the top and the Carolina Reapers. As i try to write more i will add more recipes and hope I at least strive to get more involved in gardening and canning. Have a wonderful Day. Amy

Hello again Hope all is well i wanted to share some pictures with you of the Hot Pepper Jelly 



This is Scorpion pepper Jelly the color is Orange and my husband just had is first jar open and used this on his Pork steak that I made for dinner. The large jar at the top picture he will use with meat balls for a sweet hot. They are a big hit.  



I will add more pictures as i make the Jelly and then I will add pictures of our Hot Pepper Powder and also my Hot Pickled Vegetables. Have a Great evening.

Good Morning I would like to share one of my Hot Pepper Jelly Recipes with you.

I usually don't measure my peppers in cup since I use Scorpions or Habaneros.


                  Hot Pepper Jelly

2 scorpions or 3 habanero stems cut off. ( keep seeds in peppers )
1 1/2 cups white vinegar
6 cups sugar
1 box with 2 packs liquid pectin


In a food processor I put 1/2 vinegar and peppers blend. In a large pan place 1 cup vinegar with the blend of peppers and start to warm add the 6 cups sugar bring to boil then add the pectin and bring to full boil.

Have you jelly jars warm and clean lids and rims ready. Ladle hot jelly into jars place make sure the rim is clean and place your lids and rings. I use and old fashion canner method after my jars are ready I place them in a hot bath and boil 10 min then remove them with Canning Jar Handle. Dry the jars and wait for the pop. When the pop happens then you know your jars are sealed.
When I can my Jellies , Hot Pepper Vegs, Salsa I can the old fashion way I use a enamel canning pan. here are some pictures of the items I use





these are Jar Handle for lifting the hot jars out of the canner, the hot bath pan and the canning jar funnel ( this really helps for filling your jars ) In my next post I have a Hot Pepper Jelly recipe as I work to build this Blog I will add more recipes.
